As a member of the Triple Creek Ranch operations team, the Food & Beverage Director provides leadership to all restaurant, lounge, catering and culinary operations while achieving the highest level of quality, customer satisfaction and employee engagement.
? Create a positive and energetic environment that supports the delivery of an exceptional guest culinary and beverage experience.
? Support restaurant, beverage and culinary managers by ensuring they are provided with staffing, training, tools and resources necessary to uphold the highest level of TCR and Relais & Chteaux standards.
? Maintain the extraordinary five-star TCR image and resort appearance including all service, cleanliness, and appearance standards. Enforce sanitary practices for food handling, general cleanliness, and maintenance of equipment, kitchen, server areas, lounge and dining room.
? Assist the experience team by providing all culinary and beverage aspects required for guests' adventures, wellness programming, event weekends and special events.
? Interview, select, train and mentor employees for efficient operations. Motivate and develop employees by communicating expectations, delivering feedback and conducting periodic evaluations. Lead with integrity, setting maximum standards for yourself and your team.
? Respond to all guest questions, requests, issues immediately. Serve as a point of contact for all guest food & beverage special requests, directing the culinary teams in delivery of these services.
? Support daily communications with the restaurant & beverage, culinary and experience teams through pre-shift meetings that discuss dietary needs/special requests, menus, guest needs, cabin stocking requirements and changes to operational norms.
? Deliver all restaurant, beverage and culinary related reporting requirements including inventories, community reservations, housing charts and food sales reports accurately and on time.
? Ensure compliance with operational standards, company policies, federal/state/local laws and ordinances. Verify that all staff are adhering to Triple Creek Ranch alcohol policy as well as all local, state and federal liquor laws.
? Implement and manage all departmental environmental and health/safety programs including periodic safety meetings, food safety compliance, reporting, recordkeeping and waste management (composting, recycling, etc.).
? Adhere to company standards and service levels to minimize costs, including food supply, utility and labor costs. Maintain labor costs through efficient employee time management.
? Perform any other job-related duties as assigned.
